The Rocoto Manzano is an iconic variety of Capsicum pubescens, native to the mountainous regions of South America, particularly Peru and Bolivia. Its name, “Manzano,” which means apple in Spanish, refers to the round, glossy shape of its fruits. The fruits ripen from green to red. Their thick, juicy flesh offers a fruity and slightly sweet flavor, accompanied by a sustained but pleasant heat. The plant, robust and highly branched, features the velvety foliage and black seeds characteristic of the species. Adapted to temperate climates, it tolerates cold better than most other chili pepper species. According to many, rocotos are among the most flavorful chili peppers in the world! They possess exceptional culinary potential thanks to their thick, juicy, and aromatic flesh, which holds up perfectly to cooking. Their moderate and fruity heat pairs wonderfully with almost all types of dishes.
