Elser Farm’s Brown Derby is an exceptional American variety created by Maria and Darrell Elser of Elser’s Country Farm in California. Originating from a cross between Paul Robeson and Aunt Ruby’s German Green, it combines the best of black and green tomatoes, giving rise to a unique fruit. The tomatoes are very large beefsteaks, capable of reaching almost 1 kg under ideal conditions. Their skin is a spectacular golden-brown ocher, sometimes adorned with slightly green shoulders, a coloration of exceptional rarity among tomatoes. Photos do not do justice to the true brilliance of these fruits. The flesh is dense, meaty, juicy with very few seeds. The taste is remarkable: rich, sweet, complex, combining the aromatic depth of black tomatoes with the tangy freshness of green varieties. A refined, perfectly balanced flavor. The plant, with its determinate growth, must be well-staked due to the considerable weight of the fruits. Production is moderate to good, but each tomato is a true gastronomic gem.
