OUR SCOVILLE SCALE
While countless peppers have never been laboratory-tested to measure their heat, we took the time to improvise our own Scoville scale (a measure of pungency intensity) to give you an idea of the burn produced by each of our varieties. This scale is included in the descriptive sheets of our varieties to help you better compare their intensity. We remind you that there is nothing scientific here, simply our personal opinion.

The Effects of Capsaicin
Capsaicin is the natural compound found in peppers, responsible for the sensation of heat. In reality, it doesn’t burn anything; it’s simply a reaction from your body, which tries to defend itself by sweating, salivating, and even releasing endorphins.

What is Capsaicin?
Capsaicin is a natural compound produced primarily in the white membrane of Capsicum peppers.
Belonging to the capsaicinoid family, it is an alkaloid with the formula C₁₈H₂₇NO₃, discovered in 1816 and isolated in 1876. In its pure form, it appears as a white crystalline powder, insoluble in water but soluble in fats and alcohol.
Today, it is used in medicine for its analgesic and anti-inflammatory properties. A powerful natural molecule, symbolizing the fascinating power of peppers.
Isolated vs. Non-Isolated Plants
At Sick & Twisted Pepper Seeds, we take care to isolate a large portion of our crops. Each of our variety descriptions indicates whether the seeds come from an isolated or non-isolated plant.
Isolated Plants: Controlled pollination (nets or distance) to prevent cross-pollination. Seeds are pure and true to the original variety: shape, color, taste, and heat.
Non-Isolated Plants: Free and natural pollination by insects, which can cross several varieties with each other. When cultivated, these new combinations are unstable.

Anthocyanins
Our collection also features several anthocyanin-rich varieties, as spectacular to look at as they are delicious to taste.
Anthocyanins are natural pigments belonging to the flavonoid family, responsible for the purple, blue, or black hues of certain tomatoes. They are produced by the plant to protect itself from sun, cold, and stress, while also offering antioxidant and anti-inflammatory benefits.
Their concentration depends on the variety and sun exposure: the stronger the light, the more intense the color.
Germination Rate
Every autumn marks the end of harvests, which rhymes with germination testing, to offer you seeds with success rates nearing perfection in many varieties season after season.
It is essential to perform these tests to ensure that the seeds meet your expectations and our quality standards. Seeds can be stored for several years in a cool, dry place without their germination rate significantly decreasing.
Here, we renew our inventories every three years, and often sooner in case of stock depletion, to always offer you recent and high-performing batches.
